Cajun Fried Duck

  • 3 ducks
  • 1 tablespoon salt
  • 1 tablespoon red pepper
  • 1/8 cup Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1 large bell pepper
  • stalk of celery
  • 2 lemons
  • 2 large onions
  • egg
  • flour

Use a meat fork or knife to penetrate ducks and allow seasoning to flavor meat. Salt and pepper ducks. Cut up bell pepper, celery, onions and lemons. Stuff duck with half this mixture. Place ducks in a large pot, cover with water and boil on medium heat. Add remaining bell pepper, celery, onions and lemons to water. Add garlic and Worcestershire sauce and boil until ducks are tender. Place entire pot in refrigerator for 24 hours. Remove, skin ducks and slice or tear into small pieces. Batter in egg and flour and deep fry until brown. Serve as hors doeuvres or as a meal. Delicious with homemade biscuits.
