I used to deep fry a turkey every year. They are amazing.

I injected mine with any turkey merinade they had at the grocery store. The Albertsons here have several to choose from. I prefer the Cajun merinades. Make sure to inject it the night before you fry it.

I always bought one of the 2 or 3 gallon containers of peanut oil from Walmart. I never used the whole amount but I always had enough to cover the bird. I never tried to save the oil but have read that you can strain the crap out of it and save it.

One interesting thing I found is that the little plastic pop up thermometer actually works when frying. I always poked mine with a thermometer to make sure, but the plastic one always popped out when it was done.

Be sure to dunk it slowly. It seems like every year I see on the news that someone starts a fire dunking the turkey into the oil too fast.

Yep, no water when the bird hits the grease.  I dry them with paper towels.

NEVER do them in the garage, house, or on a deck.  You will at the least get grease spots...at the worse no more home!

I wanted to go out.  Local 4* resturant is just 400 yds from home, and the buffet (great) is costing me less than the turkey, peanut oil and pies (me/wife/daughter/significant other).  So it is cheaper, and I don't have to listen to wife complain about all the work!

Wife is on 'so called diet', just another 120 to go.  ugh
