Swan and Crane tag draw applications are on the FWP buy a licence Page now. Finally! There due in a two weeks and the draw in three weeks.

Only shot one swan...tasted like rubber bands with less flavor.

Sandhills are supose to taste good, red meat???

Swan is edible if you have it smoked.
Sand hill crane is called "Rib eye in the sky"
Very tasty.

My memory of swan was use the carp recipe.

Clean carp, remove all scales.  Place onions, carrots and small stone inside carp, bake slow  basting with herbs for 3 hours.  remove from over and let sit for 30 minutes.  remove evreything inside, toss carp in garbage and eat the small stone!

Very similar recipe for doodles. A nice gravy of night crawlers and grilled lightly. Pitch the doodle and eat the worms.

doodles usually have a belly ful of worms already.  Shot a pair one day, cleaned them, let them soak overnight.  Then cooked them in white wine and butter...tasted soooo nasty I couldn't eat.  tossed into garabage, last time I ever shot any woodcock.

Woodcock or "timberdoodles" that we shoot here are good eating. Season to your tastes & flash fry in castiron skillet in Butter...mm..mm..good!

PS:eat the breast meat NOT the guts, that eliminates the worms you mentioned.

Use to do that.  But those last two were worst than eating the guts.

I had dreamt of those two with scrambled eggs and coffee...GREAT disappointment
