or, Walnut-infused wine and liqueur.

The wine recipe is French, the Liqueur recipe is Italian. Both use green (unripe) walnuts. I won't post a specific recipe because there are lots of them, all with slight differences. Basically, soak green walnuts in wine and brandy with spices, or for Nocino, Vodka or Everclear.

I just want to say that I took a sample of the Nocino. I started them on June 29th. I have two batches; one with nothing but walnuts and sugar, one with that plus a little cocoa powder and carmelized sugar. All I can say is DAAAAAMN that stuff is good. I'm thinking about adding a tiny bit of vanilla bean and dried orange peel to the one with chocolate. Maybe I'll split the batch and do that to half. It is going to be awesome in coffee or on ice-cream. Maybe on the rocks on a cool winter night.

I've got several batches of Vin de Noix, too, but I have not sampled it yet.

this sounds like a very interesting idea, ref. i've never heard of it but i like your ideas re: the vanilla and orange.

i'll have to see if i can procure some green wal-nuts sometime and give this a try.
