I start with the worcestershire sauce then sprinkle on the pepper and next the garlic salt( you can use garlic powder to cut down on salt) let it rest awhile.When the flat tri tip cooks on the grill it changes shape,best served medium for us.Serve with western style ranch beans ,salsa,a salad & bread or rolls and your choice of beverage.We like Tri Tip in a roll dipped in the meat drippings. I watched members of the Santa Inez Elks Lodge prepare the meat which was grilled over oak logs that were reduced to coals.This is popular all over the country but it all started in Santa Maria,CA.
