Cook some chopped up bacon, country ham, or fat back in the frying pan for seasoning. if you have any wild game breakfast meat or sausage, so much the better!

Add chopped, diced or sliced taters, you may have to add a little oil. When taters are about ½ done add onions. Cook until just done. Take off heat and cover tightly for 10 to 15 minutes, and this will soften up all the crust, stuff etc. that stuck to the bottom of the pan. Stir and serve.

Let each person add their own salt and pepper to taste. Adding pepper and especially salt to the taters before or while they are cooking is bad for you as they will absorbe the salt, and it will take more salt tosatisfy the individuals taste. Garlic, parsley, oragano, peppers, mushrooms, and other seasonings are optional, but are not required.
