   4 large chicken breast, or two pounds meat 
2 cups orange juice 
1 medium onion 
3 plum tomatoes 
1 jigger rum 
1 pkg mccormic grill mate spicy caribbean marinade. 
Corn starch to thicken 
combine orange juice, rum and marinade in a suitable cintainer, add meat and let sit for 30 min (i added the mixture directly in the pan, and the chicken still picked up all kinds of flavor.). Brown meat in a large skillet, add remainder of marinade, onion and tomato. Simmer 20 min or until meat is done, add corn starch to thicken last five minutes.Remove meat, and place gravy on the side. serve over rice. Great stuff!
