Char-Roasted Goose

  • 2 geese (cut into halves)
  • 1/2 cup olive oil
  • 1/2 cup Italian salad dressing thyme
  • lemon pepper
  • rosemary
  • fresh ground black pepper
  • seasoned salt
  • Worcestershire
  • 12 slices bacon

Lay geese halves in a large shallow tray, pour olive oil over geese. Using your hands, coat both sides well with oil. Arrange geese in one layer in tray with cavity side down and pour Italian salad dressing over birds. Liberally season with Worcestershire. Season to taste with thyme, lemon pepper, rosemary, pepper and salt. Cover with foil and let marinate overnight. Build a low-to-moderate charcoal fire and place geese on grill directly over fire. Cook 45 minutes (15 with cavity down and 30 with skin down). Return to tray, cavity down, and lay bacon slices over geese (three per half. Spoon remaining marinade over geese and cover tightly with foil. Bake in pre-heated 325 degree oven for one and a half hours.
