Goose hunting yesterday.There we're not many snow geese in the area but they all seamed to fly over us,COOL! The wind kept them down low and flying slow. If We could shoot we should have taken our limits the first hour, but it took us three hours of shooting to get what we got.

we ground them and the swan with some sage hens and made jerky.. Now you and stand to eat them, any one need 50 # of bird jerky ?? |

d, I only had goose jerky once. About two chews into the first bite and I almost tossed my cookies. Naaaasty stuff. Ever been in a room full of people and needed to get something out of your mouth NOW? RD |

My nephew si a goode hunter, and gets about 30 a year along with his hunting buddy. They make it as jerk, and i get apound or two a year. It is OK as you chew it, but has a chicken gut after taste. For years I worked in a poulrty business; killed and dressed tons of chicken, turkey, geese. You never forget the smell, taste of bird guts. For about 25 years I NEVER eat birds, not even a chicken McNugget. About 20 years ago I started eating some birds. The only thing that makes me lose it, is that turkey roll they sell in deli's. It reaks of Sh7t. |

Bear, I think you nailed the taste exactly. Never could eat gizzards or livers for sure. Especially after I'd "turned" my share of qizzards. I've thought about goose hunting, but I keep getting this picture in my head of all the flocks I see around here sitting on the city sewage treatment ponds. RD

Rocky, good summary of flavor. Actually, I like chicken livers and chicken gizzards (broiled with lemon, bacon, and an olive)....it is the SMELL of goose shit that is stuck in my nose and mouth. And it is slippery as a Pelosi. |

Perhaps a little freezer burned Antelope meat from a gut shot 7 year old sage fed buck in full rut might do the trick. Couldn't hurt. Could it? RD

smoke the whole goose for a great tasting product! OR........first take goose breast meat and soak in salt water for a while to "cleanse it", then slice the breast meat rather thin ie 1/4" maybe, then season to taste and let sit for a bit to take in the seasonings, then using a CAST IRON fry pan get some cooking oil or butter HOT but not burning, then quick fry the thin pieces of goose breast on both sides.....gets done rather quickly and makes for good eating....method works super for ducks too & grouse or timber doodles ...I have only had Canada goose so can't say for swan or snow geese.......RD my geese come from the Crex Meadows refuge area up here (think small Horicon) & I don't think there are any sewage ponds twixt my hunting area and the Crex where my geese come from. |
