I got away from using sourdough, lots of effort to keep it up if you don't use it often. 
Anyway I'm building up a new mother. The old one I had was over 30 years old. By Sunday it should be ready, catching them wild yeast spoors takes time.
I do a lot of baking and lately I have been fermented dough simmer to Sourdough but not "Soured" You let it slow rise in the fridge for 24 hours or more good bread. I'm using whole wheat flour It's supposed to be faster to form a mother. 
I'm not sure what to make first.

I wish I knew more about baking. Well, I guess I wish I knew anything about baking. 

That being said, Home made bread is my weakness. 
I have always considered myself to be quite the bullshitter, But ocasionally it is nice to sit back and listen to a true professional......So, Carry on.
