This works for any of the "deer" family. Take a 3-4 lb roast, pat with a paper towel to remove excess moisture. Center roast on a large enough piece of aluminum foil so you can wrap up the meat completely.  Use a peppermill to apply pepper to taste on the outside of the roast.Take one package of Lipton's Dry Onion soup and rub on all outside surfaces of the roast. Then take one 14 oz tin of Concentrated Cream of mushroom soup and cover all sides of the roast. [Do not dilute!] Just spoon out the soup and apply it to the meat. Now close up the Aluminum foil and let sit for approximately 20 minutes at room temp. Put wrapped roast in roaster or any covered pot [I use Corning ware] Preheat oven to 350F. When it has reached this temp, Put the pot into the oven and turn heat down to 325F. Roast will be done in 3 hrs or slightly less. Meat will be moist and tender and the juices trapped in the foil make an excellent mushroom gravy base. Enjoy!! Eagleye.
