Wild Duck Orange

  • 2 large ducks
  • 3 cups buttermilk
  • 3tablespoons flour
  • 1 cup water
  • 1 tablespoon sugar
  • 1 teaspoon soy sauce
  • 1/4 cup orange marmalade
  • 1 (6 ounce) can frozen orange juice concentrate, thawed
  • 6 slices bacon

Soak ducks overnight in buttermilk in a glass or pottery bowl. Keep in refrigerator until ready to use the next day. When ready to cook, remove ducks, pat dry and place in the bottom of a large casserole dish. Cover with slices of bacon. Mix flour and water in a medium sized bowl until smooth. Add sugar, soy sauce, orange marmalade and orange juice concentrate. Pour over ducks.

Bake, covered at 350 degrees for 45 minutes to one hour, depending upon size of ducks. Serve with brown or wild rice and a salad.
