I believe seviche is a latin American idea. It is a method to prepare fish without cooking. The lime juice will react with the fish and "cook" it chemically. Hey guys it is better than it first sounds.
1 lb wall eye or pan fish fillets. Juice of a dozen limes 3 tomatoes finely choopped 3 sweet onions chopped fine 2 hot peppers.(remove after a couple hours) 1 green pepper 1 clove garlic, minced 1 tablespoon parsley , finely chopped salt and pepper to taste. The pepper , onions etc are for taste so feel free to experiment a bit. Clean fish. soak in salt water for 1/4 hour , Remove and pat dry. Place fish on a platter or in a shallow bowl. Use ceramics or glass etc. no metal. Mix the above ingredients and spread over fish being sure to cover, after a few minutes turn fish to coat both sides. Cover bowl and place in fridge for 8 hours or so turning fish several times. You will see the fish takes on the apearence of having been cooked. Serve on lettuce and crackers.
