Fella's; Hah! This'll kill DD! First, ya gots to harvest a pronghorn antelope. I always grind my harvested goat 100% to burger with 10% pork suet added. This'll make a big batch of chili, use at least an 8 quart pot, 10 quarts might be better. 2 lbs antelope burger. 2 smaller onions. 2, 28 oz cans diced tomatos. 2, 28 oz cans dark red kidney beans. 4 teeth of garlic. 1/4 cup chili powder. 1, 12 oz bottle Herdez green salsa. 1 bottle beer (Pacifico or Dos Equis Amber, either works well, Corona is too light). 1 green pepper. 1 tablespoon sage (grind your own herb leaves, it works better). 2 tspns fresh ground black pepper. 1 tspn salt. 1/4 cup olive oil. Add either your home-grown peppers or red pepper to taste. Note: The chili powder you use should include no other "Mexican spices", cumin, or other ingrediants. Chop the onions & mince the teeth of garlic. Chop the green pepper separately. Heat the oil in the pot & brown the buger. As the burger browns, add the onions & garlic. When the meat is browned, pour off any fat. Then add the tomatos, beans, spices, and Herdez sauce. Bring to a low boil for 30 minutes. Reduce heat, add beer and green pepper, and simmer (longer the better) until serving. Serve with cold beer and warm cornbread. The chili itself shouldn't need onions or cheese in it. Enjoy! 900F

You do know "sage" and sage brush are two different things ,Right ?

Fella's; Well, it's easy to tell that "some of us" don't know squat about hunting goats. If you want a goat that's fed on sagebrush, go hunt Wyoming. Odds are real good you're gonna get one. If you want a goat that's fed on haybarley, grass, alfalfa, or other non-sagebrush plants, hunt central Montana. And, no, this recipe only works in this hemisphere, stirred counter-clockwise with the left hand. I don't think Antelope taste as much like sage brush as Mule Deer. I guess I might have to try one of those Montana Antelope and see how I like it. I work with a guy that is left handed. Would it work if I had him come over and do the stirring? Wing master |

I guess I'm just stupid! How do you know the antelope is left handed after it is on the ground? Can you tell before you kill him by the way he walks? If YOU shot a right handed antelope by mistake....do you leave it lie? |
