o.k.Tas,,here is the real simple one that is used here for ordinary everyday eatin',,like a PB&J,,it is very easy and nothing special so gettin' ingedients should be getable anywhere.          Heat iron pan/pot,,enough peanut oil to just cover bottom,,add 1 cup flour,,stirring all the time,(med. high heat)til med. brown color,,,if crumby add little more oil,,if a little soupy,,alittle more flour,,,do not burn/scourch,,this is the ""roux"",,you can use butter but the peanut oil lets you use a hotter pan without burning too easy.when the roux is med. color,,add a quart of water and ""THE HOLY TRINITY"" as they call it here,,chopped celery,,onion and bell pepper in equal amounts,,,a cup each for the usual fixin',,and some COOKED meats in proportion,,around here for everyday use it is usually smoked sausage,,chicken and hard boiled egg,,but anything you like is how it goes,,some add FILE' if you like it,,to thicken and add a sage type flavor,,not too much,,to taste,,then brought just to a boil and taken off the heat and allowed to set and cool to room temp.,,this allowes the flavors to mingle,,then they keep it at warm to eat whenever someone wants a bite,,usually with rice,,sometimes over cornbread,,,and always with hot sauce,,,not ness. Tobasco,,,the roux can bee browned less for a lighter flavor,,or darker for a heavier one they call MUD GUMBO,,also if you make a larger quantity,,the more/darker you make the roux,,the greater water amount will dilute to taste,,adjust the trinity amounts the same way,,,use any meat you want( the only variation to the above I have seen is the ADDITION of shrimp)the only thing that the goobers around here dont agree on is do you put rice in a bowl of gumbo or do you put gumbo in a bowl of rice,,,the amount of rice the point of dissagreement,,,and since I dont eat rice or gumbo I dont give a damn!!!!!!!!!.This kind of gumbo DOES NOT HAVE to have FILE' IN IT .wELL THAT IS HOW THESE ""up country""coon-asses eat it,,,if you have a big grocery in town they probly have a pre pared gumbo of some kind,,just check to see if it comes from La.,,,New Jersey doesn'tMAKE A GOOD GUMBO(as if I care).I you can't get it up there let me know by E-mail,,an well see if we can get some stuff to ya...........ISH-KA-BIBBLE!!!!!!!!!!!!
