I had a crazy idea and tried it out: using the ingredients for stuffed jalapenos to make stuffing for mushrooms.

Times and amounts are not nailed down. It was my first try and I was winging it.

Slice some jalapenos and clean the seeds out. Put the sliced peppers on the grille or in the oven to soften them up a bit. I put them on the smoker

Clean up your mushrooms and pull the stems out. Then put them rightside up on a wire rack and place that on a cookie sheet. Bake for about 30 min at 350deg. This will remove some moisture. I was surprised to find out how much moisture was in those damn things. (Thanks, Mom).

The stuffing was about 15 jalapenos, 5 slices of crispy bacon, cream cheese and grated cheddar, 1/2 a bulb of roasted garlic, and I also poured in a bit of bacon grease. I put the peppers, bacon, and garlic in a food processor and ground it up, then folded it into the cheese.

Spoon some stuffing into the mushrooms, dip them in bread crumbs if you like, and bake for 15 more minutes at 350deg. They turned out great. Next time, I may throw a few jalapeno seeds into the food processor for a little more jalapeno kick.

I used Button and Portabella mushrooms. They were both good.
