this is from an old italian grandmother, so i am confident that it will be delicious!
----------------------------------------- stuffing for turkey 1/2 cube butter, chopped onion (yellow), 3 cloves garlic, olive oil and celery (2 stalks). Saute in dutch oven pot on stove. add: 1 package pork sausage and 1 package hamburger (1 lb. each). stir until cooked good. add: 3 bunches spinach (cooked ahead of time), drained well and chopped good (use only fresh spinach). add) 2 loaves sweet french bread, cut in small cubes the day before and put back in paper bag. moisten with chicken broth, break up with fingers, add to pot with other ingredients. add: 3 eggs, well beaten. stir well and cook all on low heat until well-mixed. add: parmesan cheese (about 1/2 cup or a little more) add: salt, pepper, sage, poultry seasoning and some italian seasonings (oregano, basil, rosemary etc.) to taste. taste to see if you need more seasonings. it is a good idea to make this a day in advance and let sit overnight in refrigerator. the longer it stands, the more flavor it gets. ------------------------------------------ if anyone tries this, let me know how it goes. the enxt time we have chicken or a turkey, i'll probably use it. |
