  Ya know how kids all want to color all those eggs at Easter,well let em color. If you don't use them all for Egg Salad,and like some pickled here's what we've done for years,and belive it or not even the kids like them.

        Dutch Pickled Beets and Eggs

  1. 2 1-pound cans tiny whole beets,drained and save the juice
  2. 1 small onion,halved and sliced thin and then in half moons
  3. 8 hard cooked eggs,peeled
  4. 1 cup sugar
  5. 1 cup beet juice
  6. 3/4 cup apple cider vinger
  7. 1-1/2 teaspoons salt
  8. dash of fresh ground black pepper
  9. 2 bay leaves
  10. 12 whole cloves
  11. you may if you like peppers throw in 2 dried red peppers

          Put beets,onion and peeled eggs in a non-reactive glass or plastic jug or jar.  Set aside.

          In a medium saucepan,combine sugar, beet juice, vinegar, salt, pepper, bay leaves, and cloves.  Bring to a boil, lower heat, and simmer 5 minutes.  Immediately pour simmering liquid and spices over beets and eggs.  Cool to room temperature, cover, and refrigerate 48 hours before using.

Could you substitute something for the beet juice?  I hate beets.

 Don't know,you could make just regular,pickled eggs that's pretty easy,we just always do it with beets. I think I have my Moms recipe.I'll put that one in too.
