Ya know how kids all want to color all those eggs at Easter,well let em color. If you don't use them all for Egg Salad,and like some pickled here's what we've done for years,and belive it or not even the kids like them. Dutch Pickled Beets and Eggs
Put beets,onion and peeled eggs in a non-reactive glass or plastic jug or jar. Set aside. In a medium saucepan,combine sugar, beet juice, vinegar, salt, pepper, bay leaves, and cloves. Bring to a boil, lower heat, and simmer 5 minutes. Immediately pour simmering liquid and spices over beets and eggs. Cool to room temperature, cover, and refrigerate 48 hours before using.

Don't know,you could make just regular,pickled eggs that's pretty easy,we just always do it with beets. I think I have my Moms recipe.I'll put that one in too.
