Wild Boar Sausage Loaf
- 1 (10 ounce) package chopped frozen broccoli
- 2 pounds wild boar sausage
- 1/2 cup un-sugared corn flakes
- 1/4 teaspoon ground black pepper
- 1 (4 ounce) can mushroom pieces
- 1/3 cup catsup
- 1/3 cup favorite barbecue sauce
- 3 slices Swiss cheese
- 3 slices cheddar cheese
Thaw, wash, and drain broccoli in colander. Drain mushrooms well.
Mix sausage, mushrooms, corn flakes, black pepper, catsup and barbecue sauce.
Cover 10xl6 inch cookie sheet with aluminum foil. Place sausage mixture on foil and spread evenly to each edge. Spread broccoli on sausage. Pat broccoli lightly into sausage mixture. Next roll sausage into a loaf. To do this, gently lift foil over to begin your first roll. It is easiest to begin rolling from the longer sides, then cut loaf in half for handling and cooking, if needed.
Place loaf on greased or non-stick cookie sheet for baking. Bake at 350 degrees for approximately one and one half hours. Remember that pork must be cooked completely. At last five minutes arrange cheese slices across top of loaf, finish cooking until cheese melts.
If a sauce or gravy is desired, a plain brown gravy works great.
