I was talking to Wing about buck vs doe regarding
taste.

Over the years I've found the best animal to shoot,
for taste, is a young buck.

Why???

Well my friends say a doe is the best eating.... BUT
that nice fat doe you shoot maybe 10-12-15 years old.
Not really a good tender age. Some time as you gut
the doe look at the warts on its face.

Fawns really have no flavor nor texture to the meat.

Big buck are most often 7+ years old and have high
levels of hormones due to the rut.

But a 3-4 point buck is probably 2-3 years old and
hasn't got any "doe" regardless of his wanting some.

Just my thoughts.

I agree with the young buck. My antelope last year falls
into this category. It was flavorful and tender.

I like elk meat the best. I try to pick out a smaller
cow. Not a yearling but a full grown cow that's not the
lead cow. My elk meat has always been good.

I think the most important part is how it is taken care
of in the field. I try to field dress the animal as soon
as possible after the shot paying close attention not to
cut or break the bladder and not getting any urine or
other split open guts on the meat. If it's real hot I
skin in and get it to town and in a cooler as soon as
possible.

I prefer a basket rack buck or dry doe, 1 1/2 to 2 1/2 yrs old. I will normally only take a doe, early before rut, a doe in season, can be worse than rutting buck.

The best tasting deer, I've ever had, was an older buck in rut, but with only one nut. He was as fat, as a prime steer, but had decent flavor, without being tough. At home, we often cut a four or five year old cull bull (either didn't throw good calves or was lazy)and dumped the feed to him, a month before butchering, very good eating, huge steaks with great marbling.

I like elk better than deer but I have to say the black bear I shot a few years ago was some of the best meat I have ever had.

When you see them driving around, in mid 70s, with hide still on, laying out in sun, for few days, there's no doubt about it's taste.

People say they taste like strong sage. I never got

To me at least in this area, Mule Deer taste like sage.

Antelope really don't to me. They taste more like elk,
kinda. I don't have any idea what percentage of their body
is fat, but it's not very much.
